Final Mystery Box (mine!)

I'm VERY late in posting this...but, better late than never, right?

 

I was the last one to do a mystery box, and as I remember saying, I was pretty nervous, and kept begging them to go easy on me.

 

They gave me: Tuscan flat bread (rosemary-and-garlic-seasoned), non-alcoholic ginger beer, two cans of artichoke hearts, a jar of spinach chutney (   and two cans of black soy beans (protein source).

I spent what felt like FAR too long mulling over the possibilities (and the cabinets/fridge), and then got to work. I started by putting the artichoke hearts in a pan with the ginger beer and some leftover red onion, sliced, to carmelize them. Then I dragged some leftover brown rice from the fridge, and got out a casserole dish. I mixed up the soy beans and the rice and spread it in the casserole, with some leftover tomato soup to moisten it a little. I put the casserole in the oven to heat, and then spread the spinach chutney on the tuscan bread, and put that in the oven as well. I made a green salad in which I put the other can of artichoke hearts (there's no such thing as too many artichoke hearts, in my opinion).

 

Once the casserole was heated through, I "plated" it and added the carmelized artichokes and onions on top of the casserole.

 

Voila!

I forgot to take a picture of the plate before we started eating, so you get the half-eaten view.

 

JoDee or Bob may remember if I did anything else to this, but I had to scrutinize that first picture pretty closely to remember something that happened a month and a half ago.
